  • 450g sweet potato, peeled
  • 1 tablespoon olive oil
  • 6 sprigs lemon thyme
  • 6 cloves garlic, unpeeled
  • Salt flakes and freshly ground black pepper


  1. Step 1

    Preheat oven to 200°C (180°C fan-forced) and line a baking tray with baking paper.

  2. Step 2

    Cut the sweet potato in half lengthways and cut across each half into 6 small wedges.

  3. Step 3

    Place sweet potato wedges into a mixing bowl with olive oil, thyme, garlic, salt and pepper, tossing until well combined.

  4. Step 4

    Evenly spread mixture over prepared tray in a single layer and bake in preheated oven for 30 minutes or until golden, turning wedges half way through cooking for even colour.
